Lightly Sautéed Green Beans

These barely-cooked green beans are a vegetable-lover’s delight.

Makes 6 servings.

1 tbs extra virgin olive oil

4 shallots, finely chopped

3/4 pound green beans, tops and tails trimmed and cut into 1-inch segments

Fine grain sea salt

In a large frying pan over medium heat, warm the olive oil. Add the shallots and a pinch of salt and cook until lightly crisp, about 3-5 minutes.

Add the green beans and cook just for a few minutes, until green beans are still bright green but slightly softened. Salt to taste and serve immediately.
